BLOGMAS #DAY 2 and the gingerbreadmen

how was your second door?
today I want to introduce you to

The Gingerbreadmen :)

i quickly tell you all about the recipe:
what you´ll need:
  • 600g rye flour
  • 600g wheat flour
  • 250g sugar
  • 80 ml water
  • 100 ml milk
  • 750g honey (liquid)
  • 6 eggs
  • 20g vanilla sugar or 1-2 vanilla pods
  • 30g cinnamon
  • 12g hartshorn
  • 5g potash
  • 12g gingerbread seasoning
  • raisins, hazelnuts, almonds and chocolate as desired for decorating

  1. Heat water on the stove and melt the sugar in it. Add all of the honey, mix and let it cool down until warm to the touch.
  2. Mix up one egg with the egg yolks of the other 5 and add the gingerbread seasoning

  3. mix up 500g of the rye with 500g of the wheat flour in a big bowl, add the egg-seasoning mixture, cinnamon, vanilla and the honey-mixture and work it together.
  4. That is a lot of work to do!!! But its worth it ;) While mixing add the rest of the flour bit by bit.
  5. Mix potash with 50 ml milk and add to the dough, then mix hartshorn with 50ml milk and add also. Don´t mix those two together before adding it to the dough the would erase each others effect!!!
  6. Keep on adding flour while pugging the dough!
  7. Now leave the dough in the refrigerator for at least one night and day.
  8. Preheat the oven on 160 degrees. 
  9. Roll the dough (3-5mm) on a floured surface and cut out the men. They will grow al little in the oven so keep them well apart on the griddle. Coat them with milk before putting them in the oven :) very important...the will be so pretty after baking
  10. Bake the men for 10-15 minutes.

  11. And the best part comes now...DECORATING. Do whatever you like. You can use chocolate, icing, nuts and raisins, sprinkles and all the other pretty christmassy stuff =)
    well these are not the most beautiful ones but funny and the first five
  12. for me the dough made 64 men...depends on the size ;) i think 55 are left
most important...after you managed the dough mixing part this is the most funny thing

oh and the dough mixing is actually a very good aggression therapy ;)
