It´ll take about 1 hour 40 minutes to make :)
Preheat the oven to 180°C, grease and flour two springform baking tins.

For the dough:
Batter butter, sugar and the spices until creamy.

Mix in: the egg yolks, the orange and lime juice and the grated zests until smooth.

Add flour and baking powder, slowly in small portions.

Add nuts and grated carrots - keep some nuts for decoration.

Whisk egg white with salt until stiff and fold it in in small portions

Bake for 40-50 minutes.

For the icing:
Batter butter and icing sugar until fluffy. Add lime zest, lime juice and ginger. Finally add the cream cheese.
Put the buttercream in your fridge.

Meanwhile cut your cooled cakes in half.
Then fill them with your cream cheese icing (out of the fridge).
Put everything together and add some icing on top.
As a pretty final tough decorate your cake with nuts.

Well this is not the prettiest cake ;) unfortunately I was really struggling with the oven and the dough was way to soft and it was really hard to properly cut it in half but its okay ;)

Such an delicious cake :) very nice and juicy :)
I loved it and I think I am going to make it again soon ;)

Tell me all about it if you want to make it too =D
Send me pictures or tweet me about it
You really should try it its pretty easy to make only needs a little time but its delicious ;)
